Strawberries & Cream Cake
Strawberries are in season here in NC!!! While I would love to say the strawberries I used for this cake are from my garden, it sadly isn't so.... Once I figure out how to protect them from the deer, rabbits & weeds, you can bet I will grow my own! :)
I had 6 lbs of fresh strawberries from our local strawberry farm in my house and had to get creative in using them up! The first 3 lbs I chopped up & added a bit of sugar, then we devoured them over top of vanilla ice cream and our cereal in the mornings. Oh my. Yum.
The left over 3 lbs I stuck in the fridge for later use. Well today I decided it's later enough. I'd better use them up before they go bad!
First up I made this yummy strawberry cake!
Next week I'll show you the delicious strawberry lemonade bars I made today as well!
I slightly adapted this recipe from Paula Deen's Simply Delicious Strawberry Cake.
This cake has a box of pudding in it. It made a super dense and moist, yummy cake! The fresh strawberry flavor is just delicious.
Let's cut into it, shall we? :)

Strawberries & Cream Layer Cake

1 box white cake mix
1 3.4 oz box Strawberry Creme instant pudding mix
1 lb fresh strawberries - pureed - divided
1/4 C water
4 lg eggs
1/2 C canola oil
Directions
For the cake:
Preheat oven to 350 degrees F. Lightly grease 2 (9 inch) round cake pans.
In a blender combine fresh strawberries and 1/4 cup water. Puree until smooth. Set aside 1/4 cup of puree for frosting.
In a mixer fitted with the paddle attachment, combine cake mix and pudding mix. Add pureed strawberries, eggs, and oil. Beat at medium speed until smotth, about 2 minutes. Pour into prepared pans, bake for 30 minutes, until tops crack and toothpick inserted near center comes out clean.
Let cool in pans on wire racks for 10 minutes. Remove from pans, let cool completely on wire racks.
For Frosting:
1/4 cup butter, softened
1 (8 oz) package cream cheese, softened (I used 1/3 less fat)
1/4 cup strawberry puree
7 cups confectioners' sugar
Directions
In a mixer fitted with the whisk attachment, beat butter & cream cheese until creamy. Beat in the strawberry puree. Add confectioners' sugar, 2 cups at a time, beating until smooth.
Spread frosting between layers and on top and sides of cake. Garnish as desired.
