Rustic Tomato Pizza


Having an abundance of tomatoes in my garden, I am constantly looking for different ways to use them up. 


So when I found this recipe I knew I had to give it a try!




I had never made a rustic style pizza before and it was fun to try something different.


The pizza was really delicious, but honestly for our family, the crust was a little too... crusty. :)


I will DEFINITELY be making this recipe again, however! I mean eggs on a pizza? It's unexpected and SO yummy! Next time I will just do a normal style crust rather than the folded over edges.  I think it looks so pretty like this though!


Now for the recipes!

This is the ONLY pizza crust recipe I use. I mean why not?! It is really delicious, there is no rising time needed, other than letting it rise for the time it takes to put your toppings on. So it's just mix, flatten, top and bake!

Pizza Crust:
  • 1 tablespoon yeast
  • 1 1/2 tablespoons sugar
  • 1 cup warm water (approx 110*)
  • 1 1/2 tablespoon canola oil
  • 1/4 - 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 3 cups flour
*Mix first 3 ingredients in stand mixer bowl and let set for 5 minutes. Add oil, garlic powder, salt, oregano and 1 cup flour. Mix with paddle attachment until well combined. Add remaining flour 1 cup at a time. Switch to dough hook and mix thoroughly. Add up to 1/3 cup more flour if needed. Dough should not be sticky but not overly dry.. Spread on a 11"x15" pan or a large pizza pan. Top with toppings. Bake at 425* until lightly browned.

Changes I made to this recipe:
  • Shredded mozzarella rather than fresh
  • Spinach in place of kale
  • Dried basil instead of fresh
It was super yummy and like I said before, I will be making this again while the tomatoes are fresh!
