Oatmeal Cream Pies
Browsing on Pinterest when you're hungry or feeling snackish (like at bedtime) can be dangerous... First of all, in the evening, all the junk food looks amazing, which either leads to eating something that I shouldn't or something like plain chocolate chips because there are no cookies in the house, or in the case of when I found these amazing looking cookies...
I ate nothing at all and went to sleep craving soft, chewy, overloaded with filling copycat Little Debbie Cookies. Because nothing else at all would do.
So what's a girl to do?
Why, bake them of course!
My taste testers are always close by, keeping an eye on things :)
Waiting... It's agony!
Thankfully I had the perfect excuse to bake these (not that any time at all is not a good time to bake cookies).
But these were special. Does anyone else consider cookies with filling or frosting special? It's the extra steps I think that make them seem "special" to me. Or maybe it's just the simple fact that they take alot more time :)
These were going to be vacation cookies. It's a tradition. Whenever we go on a week long vacation I make some kind of special cookies to take along. Usually it's whoopie pies, but this year, these won out. I'm not sure why because I'm a chocoholic, but I sure am glad I made these!
Now came the time to make the filling. I went into the pantry for the marshmallow creme. There was none. I asked my neighbor if she had some I could borrow. She didn't. Don't you hate that when you're sure you have all the ingredients and then find out you're missing a very important one!?
So, I sighed. I really didn't want to pack up the kids in the van and haul them to the grocery store just for one little jar of marshmallow creme! And then for some reason I re-read the post with the recipe and noticed she said she had a recipe posted for Homemade Marshmallow Creme. Really!? This I was gonna have to try!
It was the first time I used my candy thermometer for boiling sugar :) I use it pretty much only for making yogurt.
Oh yeah. This stuff was better than store bought for sure!
And it made a pretty amazing filling!
Check out all that amazing texture. A chewy, delicious, oatmeal cookie, loaded with spices. Lots of lofty, creamy, sweet filling.

And because they were Special Vacation Cookies, I decided to wrap them individually in plastic wrap for easy transport :)

I doubled the recipe, since I was making these to share... I also did not add any of the coconut extract, because I didn't have any, but I am sure that would have been VERY tasty!
